Why wouldn’t you make this low-fat loaded with flavor dish? This chicken is so good served with our Half Baked Potatoes and steamed Veggies.
Ingredients
3 large chicken breast (cut lengthwise in half)
¼ tsp. paprika
⅛ tsp. cayenne pepper
½ tsp. onion powder
½ tsp. dried thyme flakes
½ Celtic Sea salt
⅛ black pepper
2 Tbl. Olive Oil, divided
1 tsp. minced garlic
2 Tbl. Lime Juice
⅓ cup GF Chicken Broth (Pacifica)
1 Tbl. honey
1 Tbl. Butter (optional)
Instructions
1. In a small bowl, mix the spices
2. On medium high heat 1 Tbl. Olive oil in skillet. Coat both sides of chicken breast with seasoning mixture. Press it into it with fingers. Cook about 5 minutes on each side. Make sure they are no longer pink. Put the chicken on a plate and cover to keep warm.
3. Reduce heat to medium low. Add the other 1 Tbl. of olive oil and garlic to pan. Simmer for about 20-30 seconds until brown. Add lime juice, chicken broth and honey. Stir pulling in the garlic bits into sauce.
Stir and cook for about 1 minute. Add butter,sauce is ready when it is melted.
4. Pour sauce over the chicken and serve. I spoon a little on each breast once they are on individual plates.
