Morning Glory Muffins, talk about a healthy breakfast muffin and oh so good. Connor had four of these. I could only hold two. They are so filling.
Ingredients
⅓ cup coconut oil, melted (can use canola or butter)
¼ cup pure maple B syrup
½ cup pure cane sugar
2 tsp. pure vanilla
2 eggs
¼ cup orange juice
2 tsp. cinnamon
½ tsp. ground ginger
2½ cups Miracle Flour Blend
½ cup Flax meal
1 tsp. xanthan gum
1½ tsp. baking soda
½ sea salt
2 tsp. cinnamon
1 cup raisins, pre-soaked in water for 10 minutes and drained
½ cup shredded coconut (optional)
2 cups shredded carrots
1 apple, cut into tiny pieces
½ cup nuts (I used pecans)
Baking Instructions
1. Preheat oven to 350. Spray coat muffin tin with oil. Or you can use liners.
2. In Large bowl of stand mixer, Mix oil, maple syrup and sugar. Add eggs and vanilla.
3. In separate bowl, Mix Miracle Flour Blend, Flax, xanthan gum, baking soda, salt, cinnamon and ginger with wire whisk.
4. Add carrots, apple and coconut to wet mixture. Mix in Flour mixture alternating with orange juice. Lastly, add nuts and raisins. Mix well and scoop into muffin tin ¾ full. Bake for 25 minutes. Remove muffins from tin to wire rack. Eat and enjoy.
