Don’t you just love a healthy delicious meal? I know I sure feel good about it. Paleo is truly the ultimate way to eat. Paleo “Our Way” is the bomb! (This is discussed in detail in previous Blog Post). I was thinking what would you like to see in this months Blog post… The thought occurred to me recipes you could use our Paleo Crust for. Like maybe a Paleo Pot Pie and Paleo Chicken & Dumplings? Hmmmmm doesn’t that sound good?
Our own Eliza at GFM is allergic to rice. We use a lot of rice flour blends in our baked goods, unless they are Paleo. I gave Eliza the task of creating a Paleo Pot Pie. She stepped up and ate this up. Seriously, like ate the whole thing. Yes, that means it is a winner.
Sweet Paleo Pot Pie
2 Large Slow cooked organic chicken breast and thighs Seasoned with Himalayan salt ¼ medium Red Onion, Chopped 4 Large Carrots, Diced 2 Celery Stalks, Diced 3 Japanese Sweet Potato ½ cup Tapioca Starch 2 ½ cups Organic Chicken Broth (We like Imagine) 1 tsp. Thyme 1 Paleo Pizza Crust Dough Ball (Available at GFM or Whole Foods – Lexington/Louisville KY) 1. In a large pot filled ½ way up with water bring just the carrots to a boil and cook for 20 minutes or until the are slightly tender. Add sweet potato and cook 10 minutes or until just slightly tender. Add celery and onion and cook 10 minutes more. 2. Remove from heat and drain. 3. In a Large deep skillet, pour your chicken broth minus ½ cup. 4. Mix the tapioca starch with the ½ cup broth you set aside. 5. Bring skillet of broth to a boil and slowly add the tapioca thickener. 6. Add Thyme and salt/pepper to taste. 7. Pour all in lightly sprayed 13/9 Casserole dish. 8. Roll out your paleo dough on tapioca floured surface ¼ inch thick. Cut into Large squares and lift with spatula and place on pot pie filling in dish. Once it is covered with dough pieces brush them lightly with an egg wash (1 egg yolk/ 1 TBL water) 9. Bake at 375 until crust is flaky and pot pie bubbly. 25-30 minutes. Enjoy.
