In today’s society we think of turkey, stuffing and all the fixings for Thanksgiving, right? That’s cool cause we got you covered at the bakery. Just go to our “Order” section and order the items you desire.
I cannot help but reflect on the word “Thanksgiving” and what is happening in our world. I’m not going to go on some political speech or rant, so don’t worry. I’m actually thinking of with all this craziness how thankful I am. Yes, I’m thankful for my family, even my son Connor who has Celiac Disease (lol), for my community, my friends, neighbors, our home and of course our business… and so thankful for our customers. I’m thankful that although our country isn’t perfect, I still have the freedom to speak openly and pray… even at work.
With all the ugliness in our world I’m thankful that I can still see the beauty God has created all around me. That there is still beauty within me. The world cannot take that away and I choose to live with a positive loving outlook. As our country/world struggles more and more…. I’m thankful I can put my hope in Jesus. I’m thankful that I can write this without being arrested. Gluten Free Miracles has always been a faith driven business. We have a prayer wall in the office. We have customers come in or call asking us to pray for or with them. I cannot tell you how thankful and humbled that makes us.
There truly is so much to be thankful for…. and yes, I’m thankful we can provide all gluten free – Baked Stuffing, Rolls, Dumplings, Pies and so much for those who need gluten free, paleo or vegan. It’s a blessing and I know it sure does help at the holidays.
I challenge you to look for three things everyday until Thanksgiving you are thankful for. Then I challenge you to be a blessing. Here is my gluten free pie crust recipe. I hope it too is a blessing.
*GF PIE CRUST
1 ½ cups Miracle Flour Blend , ¾ tsp. Xanthan Gum ¼ tsp. Sea Salt ½ cup Palm Oil (not melted) (or Butter for buttery crust or both) 1 Egg, 1 Tbsp. Lemon Juice, 2Tbsp Coconut Milk (as needed) DIRECTIONS Pre-heat oven to (375) ____ degrees F. In the bowl of a stand mixer, whisk together Miracle Flour Blend, xanthan gum, and salt. Add palm oil and mix on medium speed. Mix until crumbly, then add lemon juice to egg white and add to flour mixture. Add rice milk 1 Tbsp. at a time just until blended (If needed). You can either turn out onto wax paper with flour and roll out or sit dough in pie plate and work with hands to smooth out. This is what I prefer. I have always had a pickle of a time keeping the crust from breaking when moving it. Press the crust in the pan with my fingers dipped in flour works best for me. Bake for (20-25) minutes or until golden brown. Cool on rack.
